Avocado Pasta Salad

Makes 5 servings 


  • 500g of Pasta (Gluten-free) 
  • 1 cup frozen baby peas 
  • 1 cup corn kernels 
  • 1 avocado sliced
  • 2 cups sliced cherry tomatoes


  • 2 avocados 
  • 1 handful of spinach leaves 
  • 1 tsp minecd garlic 
  • Italian herbs
  • Salt 
  • Lime 
  • 125ml almond milk 


  1. In a large pot bring water to a boil then add 500g of pasta. 
  2. About 4 mins before pasta is finished add in corn and peas, once pasta is cooked drain and place in a large mixing bowl.
  3. In a food processor blend sauce ingredients; spinach, 2 avocados, soy milk, Italian herbs, garlic, salt and 1/2 of a limes juice until smooth. 
  4. Once sauce is creamy add it to the pasta with additional sliced avocado and sliced cherry tomatoes. 
  5. Stir until combined. 
  6. Serve 😊
