
Banana Bread Protein Mug Cake
- 1 Banana, mashed
- 1 Egg ((or 1/4 cup egg whites))
- 1 tsp Stevia ((or sweetener of choice))
- 2 tbsp Vanilla Pea Protein Powder
- 1 tbsp Psyllium Husk
- 1 tsp Maca Powder
- 1/2 tsp Baking Powder
- 1 tsp Cinnamon
In a medium mixing bowl, mash the banana, then whisk in the egg
Mix in the remaining ingredients until smooth
Pour mixture into a large mug (or two smaller mugs) and cook in microwave for 1 minute
Remove from microwave, check, and cook for another minute – checking continuously
If mixture rises too much, stop microwave and open the door. Once the mixture has sunk, continue cooking.
Remove from the microwave and tip onto a plate – or mug cake can be eaten directly from the mug – and top with desired toppings.
Gluten-Free Flour Options
Instead of psyllium husk you can use either:
- 1 tbsp coconut flour
- 2 tbsp almond meal
Optional Extras
- 1 tbsp dairy-free choc chips
- Nuts – chopped or whole
- Sliced fruit – blueberries, strawberries, raspberries
- Sprinkles
Toppings
- A few slices of banana (saved from the recipe) & 1 tbsp crunchy peanut butter
- Coconut yogurt
- Any nut butter
