Banan Bread Protein Mug Cake

Banana Bread Protein Mug Cake

  • 1 Banana, mashed
  • 1 Egg ((or 1/4 cup egg whites))
  • 1 tsp Stevia ((or sweetener of choice))
  • 2 tbsp Vanilla Pea Protein Powder
  • 1 tbsp Psyllium Husk
  • 1 tsp Maca Powder
  • 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  1. In a medium mixing bowl, mash the banana, then whisk in the egg

  2. Mix in the remaining ingredients until smooth

  3. Pour mixture into a large mug (or two smaller mugs) and cook in microwave for 1 minute

  4. Remove from microwave, check, and cook for another minute – checking continuously

  5. If mixture rises too much, stop microwave and open the door. Once the mixture has sunk, continue cooking.

  6. Remove from the microwave and tip onto a plate – or mug cake can be eaten directly from the mug – and top with desired toppings.

Gluten-Free Flour Options


Instead of psyllium husk you can use either:

  • 1 tbsp coconut flour
  • 2 tbsp almond meal


Optional Extras


  • 1 tbsp dairy-free choc chips
  • Nuts – chopped or whole
  • Sliced fruit – blueberries, strawberries, raspberries
  • Sprinkles




  • A few slices of banana (saved from the recipe) & 1 tbsp crunchy peanut butter
  • Coconut yogurt
  • Any nut butter
