Sweet Lemon Loaf

This delicious Sweet Lemon Loaf was created by Miss 14 because she wanted something different. (There are only so many chocolate mug cakes you can have before you want to try something else! – Although she still has one a day!)

A variety of toppings can be added just before baking or you can have it plain.

As always, the Sweet Lemon Loaf is gluten-free, dairy-free, soy free, refined sugar free, paleo, and low FODMAP.

Sweet Lemon Loaf

  • 11/2 cups Almond Meal
  • 1/2 cup Stevia
  • 3 Eggs
  • 1 tsp Vanilla Essence
  • 1 Lemon Zest
  • 1/2 Lemon Juice
  • 1 tsp Baking Powder
  1. Preheat oven to 180° Celsius (350°f)

  2. Line a loaf tin with baking paper

  3. In a large mixing bowl (or food processor) combine all ingredients until smooth

  4. Pour mixture into prepared loaf tin

  5. Top with desired toppings of choice

  6. Bake for 17 to 20 minutes

  7. Remove from oven

  8. Let cool before slicing

  • Poppy Seeds
  • Coconut Flakes
  • Shredded Coconut
  • Chocolate Chips
  • Flaked Almonds

 

Notes

Best eaten fresh

Refrigerate once cool and warm slices in the microwave before serving

Also delicious served with dairy-free yogurt or ice cream

Store in an airtight container in the refrigerator or freeze for up to 2 months
